Winter Salad
We first had this at Uvae and I recreated this version which is close.

100g Pearled Cous Cous or fregola pasta
- 250g water
- 100g Pomegranate Seeds
- 50g Chopped Pistachios
- 50g Feta
- Chopped Fresh Parsley

Light vinaigrette
- 2 tbsp Olive Oil
- 1 tbsp Apple Cider Vinegar
- 1 tsp mayonnaise
- Cook the cous cous, rinse in cold water to remove excess starch, cool to room temperature, coat in dressing
- Prepare other ingredients and toss together
