Texas Caviar
Ingredients
- 12oz can corn, drained and rinsed
- 15oz can black beans, drained and rinsed
- 10oz can Rotel tomatoes
- 2 ripe avocados, diced
- 1/2 red onion
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 3/4 tsp salt
- 1 tsp cumin
- 1/2 tsp smoked paprika
- fresh cilantro
Instructions
Combine all ingredients, add avocados last, toss gently to combine
