- Dry brine for 24 hours
- Temper for 30 minutes before cooking

Cover in neutral oil, pepper
- Don't salt just before cooking because it will draw out moisture
- Make sure the steak is dry

- Start on high heat
- Reduce heat after the first two flips
- Baste with butter, rosemary, thyme
- Rest for 5 minutes
